What is Teff?

Teff is a fine grain—about the size of a poppy seed—that comes in a variety of colors, from white and red to dark brown. It thrives even in difficult climates. The grain has a very mild, nutty flavor, and it packs a serious nutritional punch. Teff has an excellent balance of amino acids, and it is also high in protein, calcium, and iron. It is high in resistant starch, a newly-discovered type of dietary fiber that can benefit blood sugar management, weight control, and colon health. It’s estimated that 20-40% of the carbohydrates in Teff are resistant starches.

What is Tapioca Maltodextrin?

It is an edible food starch extracted from tapioca. It absorbs and thickens fat. Using tapioca maltodextrin is preferred for its mild smell and taste, which imparts no extra flavor in food when used as additive material. Maltodextrins are easily absorbed and digestible in the human body. When added to cold water, they can add body to food without altering their taste or flavor.

Yeast extract is a processed form of yeast. It is created by removing the cell walls of yeast and leaving just the inside. Valuable proteins, amino acids, vitamins and minerals from the yeast cell remain present inside the yeast extract. In simple terms, yeast extract contains all the natural components of the yeast cell without the surrounding cell wall. The yeast extract is concentrated into a paste or a liquid in a gentle evaporation process at around 60 degrees Celsius or all water is evaporated through a spray drying process.
