Our flours are stored in a special cold room (around 55-60 degrees) until shipment.  Upon shipment, they are loaded into dry trailers.  Hopefully, the shipment will be quick and the flour will not be subjected to long periods of extreme heat.  Usually in the food shipments, the time is quick. We do not keep a large inventory of the flour and meals.  That is where our “Just in Time” production comes into play.
