How can I be sure it is gluten free?

 It is Certified Gluten Free by the Celiac Support Association to be 5 ppm.  It is produced in a gluten free environment on a dedicated line. Batches are tested using the Elisa Gluten Assay test.



Is the Soy Lecithin in the ingredient statement plant or animal based?

Hodgson Mill uses a plant based soy lecithin.


 

Is the mix considered whole grain?

No



If my mix did not contain a yeast packet, what do I use?

You should use 1 ½ tsp (6g) of Fast Rise Yeast 

Be sure all of the ingredients are room temperature before starting to mix the ingredients, or placing in the bread machine.



Do I have to have a bread machine to use this product?

No, it can be baked in a conventional oven. The instructions are on the package.



Why is the dough so different?

The flours do not contain gluten so it does not have the elastic texture of wheat bread. The dough will be more like a batter.



Why did my bread fall in the middle?

It is typical for a gluten free bread to fall a little after it comes out of the oven.  This is why the foil part is so critical to make sure the center is done.



Can I use the machine to make dough?

 Yes



What order do I put the ingredients in the machine?

Check your machine instructions for the proper order.



Which setting should I use?

Use the gluten free cycle. Gluten free bread does not perform well on a regular cycle.  If you do not have a gluten free cycle on your machine use the quick cycle on your machine.



What else can I make with this?

Pizza crust, cinnamon pull apart bread, garlic bread, buns, bread sticks.
