 Product Specific Questions:

Product of the USA:

Is it considered whole grain?

Yes, it is the whole oat groat.

How are steel cut oats different than rolled oats?

Steel cut oats are whole grain oat groats that have been cut in only two or three pieces instead of being rolled. Steel cut oats are more hearty in texture and have a rich nutty taste. Rolled oats are oat flakes that have been steamed, rolled, re-steamed and toasted.

Can I cook them in the microwave?

Yes, the directions are on the box. A mixing bowl or larger bowl works best. Do not leave unattended as cereal will expand as it cooks. Best results are achieve on the stove top or in a slow cooker.

How much do I use in a recipe for cookies or breads?

You can substitute cooked steel cut oats cup for cup for cooked oatmeal in a recipe.  But it is not the same uncooked and will not substitute cup for cup as a dry ingredient.

How much Beta Glucan is in the Steel Cut Oats cereal per serving?

There are 2.8 grams Beta Glucan in a serving of Steel cut Oats cereal.

Do I have to adjust the moisture in the recipe if I add the oats?

You would need to soak them overnight or people would break their teeth. You will have a wetter batter. The liquid would have to be adjusted. It may be best to find a recipe that specifically calls for steel cut oats. The recipe would either cook or pre-soak the oats and liquid would be in correct proportion.

Cooking Tip: Steel Cut oats do very well in a crock pot or slow cooker. Larger quantities can be cooked and refrigerated.

Simply reheat the portion for a meal. There are several recipes on the Hodgson Mill blog.

Revised measurements for cooking so that the liquid is absorbed

Servings             Water or Milk             Hodgson Mill Steel Cut Oats

1                         1-1/2 cups                   ¼ cup

2                         1-3/4 cups                   ½ cup

4                         3-1/4 cups                   1 cup

Pot sizes also is a factor for how much liquid to use.  The guide above is with a 3-4 quart size pot

What is the green tinge in my steel cut oats?

Since our steel cut oats are not fortified, the minerals (mainly the iron) in the oat groat can react to what liquid it is being soaked in.  This would be the water, milk, soy milk and so on for a long period of time.  An additional source would be the container used to soak the product in having a reaction with the minerals in the oat groat.  It is not harmful if the green tinge is consumed but most individuals choose to just skim it off and finish the cooking process.

Does this product contain glyphosates?

No. Our grain vendor for oats is one of the few companies that have announced that they will reject oats exposed to glyphosate. They found that oats they received that had been exposed to glyphosates did not meet their quality standards for the grain itself.
