How can I be sure it is gluten free?
It is certified Gluten Free by the Celiac Support Association to be 5 ppm and produced in a gluten free environment on a dedicated line. Batches are tested used Elisa Gluten Assay test.
Is it considered whole grain?
No it is not. The Cream of Buckwheat has the green skin removed from the groat. It is the polished starch from the heart of the buckwheat and is made just like Cream of Wheat or Cream of Rice. Flax seed is not classified as a grain

Does the GF Buckwheat Hot cereal have to be cooked?
No, the ingredients can be consumed without being cooked. However, the texture and mouth feel of the cereal would not be pleasant to most people.
Can I use water instead of milk to cook the cereal?
Yes, water can be used in place of milk for those with dairy allergies.
How much soluble and insoluble fiber is in it?

The Buckwheat Cereal does not contain folic acid.Folic acid is the synthetic form of folate, which is naturally in grain. It should be listed on the ingredient statement if it has been added to a product. Buckwheat does contain natural folate which is in many grains.
