Coconut Flour attracts water and fat which will keep your gluten free foods moist for a bit longer.

Coconut Flour is naturally sweet flour produced from the meat of organic coconuts after they have been pressed to produce organic coconut oil.They break the coconut, remove the shells, dry, shred, press out the oil, grind, pulverize, inspect and package the flour. It is high in fiber, high in protein and low in carbohydrates.

Is your coconut flour produced at high temperatures?
No, it is considered a cold pressed product.The coconut is desiccated and then pressed through an expeller, which is hot.This removes the oil.It is then milled into flour.It does have the smell and flavor of coconut.
How do you use Coconut Flour?
You can substitute 10 to 20 percent of wheat based flours without changing the flavor or texture. Liquid in your recipes will need to be adjusted by about the same percentage as Coconut Flour’s high fiber makes it very absorbent.Coconut Flour attracts water and fat which will keep your gluten free foods moist for a bit longer.It also works well as a thickener in soups and stews as well as in frostings.Pancake and tender pastries (quick breads, cupcakes, muffins, and cakes) also work well with coconut flour or in combination with other flours.

No it does not.

Does the drying process use any chemicals?
Our supplier does not use hexane or any other solvents in the production of our coconut flour. After drying the coconut is mechanically pressed to extract the coconut oil. The remaining coconut meat is then finely ground to produce our flour.
