How can I be sure it is gluten free?   

It is Certified Gluten Free by the Celiac Support Association to be 5 ppm.  It is produced in a gluten free environment on a dedicated line.  Batches are tested used Elisa Gluten Assay test.



Is the Sunflower Lecithin replacing the Soy Lecithin? 

Yes



Is the mix considered whole grain?

No



If my mix did not contain a yeast packet, what do I use?

You should use 1 ½ tsp (6g) of Fast Rise Yeast.



Do I have to have a bread machine to use this product?

No, it can be baked in a conventional oven, instructions are on the package.



Why is the dough so different?  

The flours do not contain gluten so it does not have the elastic texture of wheat bread. The dough will be more like a batter.

Why did my bread fall in the middle?

It is typical for a gluten free bread to fall a little after it comes out of the oven.



Can I use the machine to make dough?

Yes



What order do I put the ingredients in the machine?

Check your machine instructions for the proper order.



Which setting should I use?

Use the gluten free cycle. Gluten free bread does not perform well on a regular cycle.



What else can I make with this?

Pizza crust and rolls when using muffin pan.
