Substitution ratios in recipes:

Butter: ½ cup butter flavor Crisco plus 1 Tbsp water or ¼ cup + 2 Tbsp oil in place of ½ c butter

Eggs: ½ cup plain applesauce (1/4 cup per egg) or 1 Tbsp milled flax seed + 3 Tbsp water (1 egg)

Buttermilk: 1 cup almond milk with 1 tbsp. of vinegar or lemon to sour the milk

1tsp vanilla extract (in place of almond)

How can I be sure it is gluten free? 

Celiac Support Association certifies it to be 5 ppm. It is produced in a gluten free environment on a dedicated line. Batches are tested used Elisa Gluten Assay test.



Is it considered whole grain?

Yes, it is approved 50%+     10g per serving



Can I substitute egg beaters or egg whites only for the two whole eggs? 

Yes



Can I use whole milk or 2% in place of the buttermilk?

 No, use sour milk with either vinegar or lemon juice.



How do I make buttermilk?

Add 1 Tbsp. of vinegar or lemon juice to 1 cup of milk.  Let stand 5 minutes before using.



What type of sugar was used in this mix?

We use cane sugar in all our products.


 

Can I make a 9x13 cake with this mix? 

It will be a very thin cake.  We would recommend an 11x8 with a baking time of around 23 minutes.
