How can I be sure it is gluten free? 

Celiac Support Association certifies that it is 5 ppm  It is produced in a gluten free environment on a dedicated line.  Batches are tested used Elisa Gluten Assay test.



Is it considered whole grain

No, it does not contain 51% whole grain.



Can I substitute egg beaters or egg whites only for the whole egg? 

Yes 



Can I use oil in place of the butter or shortening? 

No, consistency is necessary for structure of end product. 



What is the best way to store the cookies after baking? 

An air tight container.Finished product should be stored in refrigerator.  Should be eaten within a couple of days or store in freezer.



Why did you change the formula

To make the cookies spread better and for a more consistent cookie texture .



Can this mix be baked as a pan cookie? 

Yes, lightly grease or use parchment paper in a 9x13 pan.  Bake for 18-22 minutes or until set and lightly brown. Do not over bake.



Can I make this into a cake? 

Yes place into an 8x8x1 ½” pan and bake in a 350 oven for 45 minutes. (This suggestion came from a customer that does this)



Can I make cut out cookies?

(This tip came from a customer that has a cookie business. She uses our Cookie Mix all the time). Yes, use brown rice flour to flour the baking mat. Be sure your dough is thoroughly chilled. Carefully take out the cookie cutter when cutting. Take the baking mat and place in the freezer right away so they don’t lose their shape. Wait until they freeze and then bake them.



Oatmeal Chocolate Chip recipe

(given by a customer who has a cookie business and uses our mix all the time)  Add 1/3 cup brown sugar, 1 cup old fashioned oats and chocolate chips.



What type of sugar do you use in your products?

We use Cane Sugar in all of our products.
