What makes it self rising?

The leavening agents are already added to this product. They are monocalcium phosphate and baking soda.



What is monocalcium phosphate?

It is a leavening agent. When combined with baking soda, it reacts to produce carbon dioxide. The carbon dioxide gas causes the rising effect.It does not contain aluminum.

 


What is the difference between white and yellow corn?

There is do difference aside from color. They are two varieties of corn.


 

How do I use it?

It can be used alone to make cornbread or muffins or in combination with other flours in many recipes. Typical use is ½ of the total flour can be replaced with this.


 

Is this a whole grain product?

Yes



What is mush?

This is a Southern style porridge made from boiled cornmeal.


 

What is polenta?

The Italian version of mush.



Can I use this in a bread machine?

It is not recommended to use with a yeast product as it already has leavening in the meal. It is typically used in muffins, quick breads and pancakes.

If I store my cornmeal in the freezer, what do I do before using it in a recipe?

It is best to bring all ingredients to room temperature before use, unless otherwise specified in the recipe.



Why does it have to be room temperature?

Because cold ingredients may adversely affect the recipe performance.


 

Can I fry with this?

Yes. If used on meat, it may have to be dipped in egg or milk to get the corn meal mix to stick to the surface of the meat. Keep in mind that it has leavening in the mix.
