What is the difference between white and yellow corn?

There is no difference aside from color. They are two varieties of corn.


 

How do I use it?

It can be used alone to make cornbread or muffins or in combination with other flours in many recipes. Typical use is ½ of the total flour can be replaced with this.


 

Is this a whole grain product?

Yes


 

What is mush?

This is a Southern style porridge made from boiled cornmeal.


 

What is polenta?

The Italian version of mush.


 

Can I use this in a bread machine?

Yes

 


How do I add this to a bread machine?

If using a recipe that call for approx. 3 1/2 flour, make only 1/2 cup corn meal. Mix flours and cornmeal well before using in recipe. Add liquids first, then add dry ingredients, next add the fat, then add the yeast last.

How do I make this self-rising?

Add 3 Tbsp. All Purpose white flour, 1 Tbsp. baking powder and 1/2 tsp. salt per cup needed.



If I store my flour in the freezer, what do I do before using it in a recipe?

It is to bring all ingredients to room temperature before use, unless otherwise specified in the recipe.



Why does it need to be room temperature?

Because cold ingredients may adversely affect the recipe performance.



Can I fry with this?

Yes
