What is the difference between white and yellow corn? 

There is do difference aside from color. They are two varieties of corn.



How do I use it?

It can be used alone to make cornbread or muffins or in combination with other flours in many recipes. (Using only corn meal with no additional flour for muffins or cornbread will result in "old fashioned" cornbread or muffins that are very dense). Typical use is ½ of the total flour in a recipe can be replaced with cornmeal.


 

How can I avoid the grainy texture of corn meal in my finished baked good?

 Mix the cornmeal with the liquid called for in the recipe, bring to a boil stirring constantly. Cool the mixture then add to the other ingredients.


 

Is this a whole grain product? 

Yes



What is mush? 

This is a Southern style porridge made from boiled cornmeal.



What is polenta? 

The Italian version of mush.



 Can I use this in a bread machine?

Yes, if blended in a recipe with flour.

 

 

How do I add this to a bread machine?

Use no more than 3 ½ cups total flour. Corn meal needs to be mixed with other flour when using in a bread machine.  Use no more than 1/2 cup corn meal as part of the   3 1/2 cups of flour. Add liquids first, then add dry ingredients, next add the fat, then add the yeast last.

How do I make this self-rising?

Add 1 ½ tsp. baking powder and ½ tsp. salt per cup needed.



If I store my corn meal in the freezer, what do I do before using it in a recipe? 

It is best to bring all ingredients to room temperature before use,unless otherwise specified in the recipe.



Why does it have to be room temperature? 

Because cold ingredients may adversely affect the recipe performance.



Can I fry with this? 

Yes
