What do I do with buckwheat?
Buckwheat can be used to make pancakes, quick breads, muffins, etc.
How do I use it in a recipe?
In most recipes you will want to use no more than ½ of the total flour as buckwheat.
Vital wheat gluten should be added for better performance. One teaspoon per cup of flour.

My buckwheat is grayish/purple. Is that normal?
Yes.
My buckwheat flour is a different color than other packages I have purchased in the past. Why?
When smaller grains are used to produce the flour, there is naturally less white from the center of the grain and therefore a darker color results. Samples are taken throughout the production process to ensure that all flour produced matches our specifications. All products are inspected and approved by our head miller and/or mill supervisor.
If I store my flour in the freezer, what do I do before using it in a recipe?
It is best to bring all ingredients to room temperature before use, unless
otherwise specified in the recipe.
Why does it have to be room temperature?
Because cold ingredients may adversely affect the yeast performance.
