Is this flour stone ground?

Yes, we mill it on our regular mill stones.



Can I use brown rice alone in a recipe?

Typically brown rice flour is used in combination with other flours. In those combinations it should be used as 50 % of the total mixture. Certain recipes can use brown rice alone. These recipes may resemble cornmeal in texture. Extra liquid may be needed. One tablespoon at a time until proper consistency is achieved.Vital wheat gluten should be added for better performance. One teaspoon per cup of flour.


 

Can I store this in the freezer?

Yes, but bring up to room temperature before using it to bake. Cold temperature may adversely affect the yeast or leaving in your recipe.
