What makes this different than all purpose flour?

Bread flour has higher protein content than all purpose flour. HMI Bread flour ranges from 12.7 to 13.3 protein content.


 

Can I use this in place of all purpose flour? 

Yes, if in a yeast bread type recipe.



What type of wheat is used to make flour?

It is made from 100% hard spring wheat.



 Why are there enrichments in this flour? 

By law we are required to add certain nutrients back into flour that has been enriched.



Is this whole grain flour?

Can I use this in a bread machine? 

Yes


 

How do I add this to a bread machine?

Use no more than 3 ½ cups of flour. (This can be the only flour if you want)

Add liquids first, then add dry ingredients, next add the fat, then add the yeast last.

 How do I adjust my recipes?

This flour can be used alone in recipes or in combination with other flour. Vital wheat gluten should be added for better performance. One teaspoon per cup of flour.

 

How do I make this self-rising?

Add 1 ½ tsp. baking powder and ½ tsp. salt per cup needed.



Does this flour use ferrous sulfate in the enrichment?  

No, our Best for Bread flour is enriched but does not use ferrous sulfate.
