How can I be sure it is gluten free?

Celiac Support Associations certifies it to be 5 ppm. It is produced on a dedicated line. Batches are tested used Elisa Gluten Assay test.



What is xanthan gum?

It is made by the fermentation of corn sugar with a microbe Xanthomonas Campestris, which the name is derived from.

It is used as a stabilizer, emulsifier and a thickener.

It belongs in a group of food additives know as starches, gums, and gels.

If someone is allergic to corn, it may be best to avoid using Xanthan Gum as it is a derivative of corn.



What is it used for?

Xanthan Gum is a binder and stabilizer. It is a natural carbohydrate and it is used in conjunction with gluten free ingredients in baking gluten free breads, cakes and cookies. It is used to give the dough or batter a “stickiness” in place of gluten. It adds volume and viscosity to bread and other baked goods. It helps gluten free foods stick together, gives them structure and stay moist. It can also be used as an aid in thickening recipes.


 

How much do I use?

On the side of the carton you will find the following tips: Add 1 tsp. per one cup of gluten free flour used in breads and pizza dough recipes.

Add 1/2 tsp. per one cup of gluten free flour for cakes, muffins, and quick bread recipes.

Add 1/2 tsp. (or less) per one cup of gluten free flour used in cookies and bar recipes.
