Storage recommendation:

Substitution ratios in recipes:

•Fast Rise yeast may be used to replace active dry yeast. Use ½ teaspoon less fast rise yeast per packet.

•Active Dry yeast can replace instant yeast in a 1:1 ratio

•Active Dry yeast cannot replace nutritional or brewer’s yeast in a recipe.

How to proof yeast?

1/4 c. warm water, 1/4 tsp sugar, and yeast.  Let stand for 5-10 minutes.



How is this different than other yeast?

Our active yeast can be used in place of any other active yeast in a 1:1 ratio.

Brewer's yeast is not alive and is a byproduct of the brewing industry.


    

You have more yeast in your packet. Will it affect my recipe?

No. Use one packet for one packet. We have many whole grains, which tend to need more help rising.


 

How much yeast is in this packet?

2 ½ tsp. or 8.75g or close to 1/4 oz= 1 cube of fresh yeast


 

Why should I proof yeast?

Proofing dry yeast helps to reanimate it and with the addition of sugar, will verify that the yeast is active.


 

How do I know if my yeast proofed properly?

Yeast will foam after approximately 5 minutes if it is active.


 

Are there sulphites in our yeast?

How do I store my yeast?

The refrigerator is the best place to store it.


 

Can I freeze yeast?

We do not recommend it because the cells are alive and freezing may fracture the cells.


 

How do I store my opened package of yeast?

You can fold over the unused package and store in the fridge or store in a glass jar.


 

What is this yeast grown on?

It is grown on cane molasses.


 

Are there any additives in this product?

Yes there are some processing aids in this yeast.

Sorbitan Monostearate - Typical usage level ranges from 0.30 to 0.70%. an emulsifier used in yeast manufacturing to aid in the drying process. Sorbitan Monostearate protects the yeast from excess drying and also aids in the re-hydration of the yeast cells. It is considered safe and actually can aid the body in fat absorption. Source of the Sorbitol in the Sorbitan Monostearate is unknown, however it is plant and may or may not be corn. Allergens are part of the protein structure of the organism, however the process used to produce Sorbitol eliminates the plant protein.



Is the Sorbitan Monostearate corn based?

It can be. Suppliers might use 100% corn or 100% tapioca for a period of time and then might be using a mixture of corn and tapioca other times. If you have concerns about corn, it would be best to find a product that can definitely state that corn is not used.


 

Is it alright to add boiling water to the yeast?

No. Boiling water will kill the yeast.


 

Is it alright to add cold water to the yeast?

No. Cold water will slow down the activity of the yeast.


 

Can I eat yeast raw?

No. Yeast will ferment in the stomach causing bloating and discomfort.


 

Is Active Dry Yeast Non-GMO?

Yes, it is certified Non-GMO through Greenstar, but has not been verified through the Non-GMO project.


 

How many live active cultures are in a packet of our yeast?

Our supplies does not guarantee any amount but the average cell count on dry yeast is about 10 billion yeast cells per gram.



Septic Tank Tip

Take one packet of Hodgson Mill active dry yeast and a box of brown sugar.  Pour this down your toilet about every 3-4 months.  Seems the yeast and brown sugar put beneficial bacteria back into your system, that may have been diminished through the use of chemical cleaners, etc.
