It is sorghum that has had the outer coating, or pericarp, removed. But the nutrient filled germ remains. It has also been cracked into smaller pieces to reduce the cooking time.



How do I use Pearled and Cracked Sorghum? 

It is an excellent gluten free alternative to couscous. It can be used as a rice or pasta replacement. Cooked pearled and cracked sorghum makes a delicious addition to any salad or soup. It can also be combined with your favorite roasted vegetables or meats for a delicious entrée.
